Holiday roast beef salad

Ingredients

8 | ounces | Alfalfa sprouts |
1 | pounds | Roast beef, thinly sliced |
1 | 14 oz. can artichoke hearts, drained and halved | |
1 | small | Red pepper, seeded and cut into strips |
½ | cup | Olive or vegetable oil |
¼ | cup | Wine vinegar |
Salt and pepper | ||
Chopped parsley |
Directions
Arrange the alfalfa sprouts on a large platter. Roll up the roast beef slices and arrange on top of the sprouts. Place the artichoke hearts between the beef rolls and garnish the center with red pepper strips. Mix the oil, vinegar, and salt and pepper to taste. Spoon over the salad.
