Homemade summer sausage

Ingredients

Quantity Ingredient
2 pounds Ground chuck
2 tablespoons Morton's quick curing salt
½ teaspoon Onion powder
½ teaspoon Garlic powder
tablespoon Liquid smoke flavoring
1 cup Water
1 teaspoon Mustard seed
1 teaspoon Crushed peppercorns
(optional)

Directions

Mix together with hands. Form into 3 sticks about the side of a half dollar. Wrap in foil an refrigerate for 24 hours. Unwrap and bake in 300 F oven for 1 hour in a shallow pan. Let cool 1 hour. Store in clean foil in refrigerator. Serve with crackers.
