Hot and sour chickpeas

2 mediums Onions; chopped
2 Cloves garlic; minced
1 tablespoon Ginger root; minced
1 Stick (2-inch) cinnamon
2 teaspoons Garam masala (or curry powder)
¾ teaspoon Black pepper
2 cans Chickpeas
15 ounces Tomatoes (up to)
4 tablespoons Lemon juice
Cayenne

Here's a delicious recipe my family loves--even those who are not enamored of chickpeas!

Brown onion, garlic & ginger slightly in enough oil to coat pan. Add spices. When hot, add chickpeas and their liquid. chop tomatoes and stir in with ¾ c juice. Add 2 T lemon juice. Taste and add cayenne and more lemon juice if needed.
