When you are shopping for peaches, the Food Council, Ontario Department of Agriculture and Food, advises that you look for firm undamaged fruit that is well-colored, with no evidence of green. Always select peaches with well-colored "ground" or under-color, which may range from creay white to yellow, depending on the variety. A green tinge in the ground color indicates immature fruit which will not ripen completely. Although the "rosy blush" on peaches is lovely to look at, it is not necessarily an indication of peach flavor or maturity. The "blush" differs with the variety.

Store ripe peaches in the refrigerator in a covered container or perforated plastic bag. At this temperature, they will retain their high quality for about a week. If your peaches are slightly unripe, spread them out at room temperature, away from direct sunlight. When ripened, use them right away, or refrigerate them.
