1 3 lb. boneless center-cut chuck roast
1 Green bell pepper; sliced into 1/4
; inch slices
1 medium Yellow onion; sliced into 1/4
; inch rings and
; separated
2 packs Italian dressing seasoning mix
2 cans Lemon-lime soda or light beer

Directions

PROCEDURE:

1. Cut the roast into 4 equal portions and set them in the bottom of a large dutch oven. 2. Sprinkle the Italian seasoning over the top of the meat, followed by the seasoning mix and then pour the soda or beer over top of it all. 3. Cover and bake in a 325 degree oven for 2½ to 3 hours or until tender to touch with a fork. 4. Remove from the oven and let the roast settle for 15 minutes before serving.
