Italian zucchini muffins

Ingredients

Quantity Ingredient
3 cups Flour
1 teaspoon Baking powder
1 teaspoon Baking soda
½ teaspoon Salt
1 teaspoon Cinnamon
1 cup Sugar
4 Eggs, room temp
1 cup Oil
2 cups Grated zucchini
1 teaspoon Vanilla
1 cup Chopped walnuts
½ cup Golden raisins

Directions

Sift dry ingredients into bowl. Combine sugar and eggs inather bowl and beat with mixer medium speed for 2 minutes.Gradually add oil in a stream beating constantly for 2 to 3 minutes ( must ). add zucchini and vanill and blend well. Stir in nuts and raisins.Fold in sifted ingredients only till moistend. Do not overmix! Spoon into greased muffin tins and bake 400 20 minutes or tested done. Let muffins stand 10 minutes before removing.
