3 | ounces | Margarine or butter - softened; (75g) |
4 | ounces | Brown sugar; (100g) |
3 | tablespoons | Clear honey |
2 | Eggs - size 3 - beaten | |
8 | ounces | Bananas - peeled and mashed; (225g) |
8 | ounces | Self raising flour; (225g) |
1 | Heaped tsp Schwartz Ground Allspice | |
¼ | teaspoon | Bicarbonate soda |
½ | teaspoon | Salt |
8 | ounces | Raisins; (225g) |
Directions
Preheat oven to 350F, 180C, Gas Mark 4. Cream the margarine or butter and sugar together. Stir in 2 tbs of honey. Add the beaten eggs and mashed bananas. Mix well. Sieve the flour with the Ground Allspice, bicarbonate of soda and salt. Carefully fold the flour mixture and raisins into the creamed ingredients. Place in a 8 inch x 4 inch (20cm x 10cm) greased and lined loaf tin. Bake in the oven for approx 1 hour or until well risen and firm to touch. Remove the loaf from the tin and glaze the top with the remaining honey. Leave to cool. Quantity:
