Jamaican spice rub

Ingredients

Quantity Ingredient
3 Scallions, minced
1 Garlic clove(s), minced
¼ teaspoon Ground nutmeg
1 tablespoon Ground allspice
½ teaspoon Ground cinnamon
1 small JalapeĀ¤o, minced
1 tablespoon White wine vinegar
3 tablespoons Olive oil
¾ teaspoon Salt
½ teaspoon Black pepper

Directions

Combine all the ingredients, then smear the rub on the chicken. Put everything in a zip-top plastic bag and use it to massage the dry marinade onto the chicken breasts. Marinate for 2-4 hours.

Makes enough for 2 whole chicken breasts.
