Ingredients

1¼ | cup | Flour |
¾ | cup | Sugar; divided |
½ | teaspoon | Cinnamon |
½ | cup | Cold sweet butter; in small pieces |
1 | Egg; separated | |
½ | cup | Sliced unblanched almonds |
Directions
Heat oven to 350F. In large bowl combine flour, ½ c sugar, and cinnamon.
Cut in butter; work mixture with fingertips til small crumbs form. Add yolk and work in til well blended; shape dough into ball. Press evenly into well-greased 13X9X2" metal baking pan. Brush with slightly beaten egg white; sprinkle with remaining ¼ c sugar and the almonds, pressing them into the dough. Bake 18-20 minutes or til lightly browned. Cool a few minutes, then, using a cleaver and pressing down firmly, cut into 2X1" bars. Finish cooling in pan on rack before taking from pan. Per cookie: 43 cal, 1 g pro, 5 g car, 2 g fat, 10 mg cho.
