Kellog's double coated chicken

Ingredients

1 | cup | Skim milk |
1 | cup | All-purpose flour |
½ | teaspoon | Salt |
¼ | teaspoon | Pepper |
3 | pounds | Chicken pieces; with or |
. without skin | ||
3 | tablespoons | Margarine; melted |
Directions
Place cereal into a shallow dish or pan. Set aside.
In a small mixing bowl, beat the egg and milk slightly. Add the flour, salt and pepper. Mix until smooth. Dip the chicken in the batter. Coat with cereal. Place in a single layer, skin side up, in a foil-lined shallow baking pan. Drizzle with margarine.
Bake in a preheated oven at 350øF about 1 hour or until the chicken is tender, no longer pink and the juices run clear. Don't cover the pan or turn the chicken while baking.
