Kennebunk relish (surely from georges family)

2 | pounds | Green Tomatoes |
1 | each | Head Cabbage |
2 | eaches | Sweet red peppers |
1 | each | Bunch Celery |
1 | quart | Vinegar |
1 | each | Stick cinnamon |
1 | teaspoon | Dry Mustard |
2 | pounds | Red Tomatoes |
2 | eaches | Green hot peppers |
1 | quart | Onions |
6 | tablespoons | Salt |
3 | cups | Dark brown sugar |
1 | teaspoon | Cloves |
Directions
Remove seeds from peppers. Chop finely the peppers, tomatoes, cabbage, onions, and celery. Add salt and let stand over night. In the morning drain off the juice and add vinegar and sugar. Tie cinnamon, cloves, and mustard in piece of cheese cloth, add to other ingredients and simmer for a good half hour and seal in jars.
