Key lime mayonnaise

Ingredients

Quantity Ingredient
1 each Egg white (or 1/4 cup egg substitute)
½ teaspoon Dry mustard
½ teaspoon Salt
1 cup Canola or olive oil
tablespoon Key lime juice
½ tablespoon Very hot water

Directions

Method: In blender, combine egg white, mustard, sugar and salt; blend 2 seconds. With motor running, gradually add ½ cup oil, then 1 tablespoon juice, then remaining ½ cup oil, then remaining ½ tablespoon juice, then hot water. Stop motor and scrape blender as needed. Blend till consistency of mayonnaise. Refrigerate covered till needed.
