Kvasivka selians'ka - tart village soup

Ingredients

Quantity Ingredient
2 cups Meat stock beef or pork
2 cups Sauerkraut juice
1 each Egg large
1 cup Sour cream
2 tablespoons Flour
1 teaspoon Dill freshly chopped
½ cup Potatos mashed
Rye bread croutons

Directions

Bring stock to a boil & add sauerkraut juice. Mix in sour cream, flour, & egg. add a small portion of the hot stock. Mix then add to the pot & simmer for 3 minutes. Add the mashed potatos ands sprinkle with the dill. Seve with the ryebread croutonsmsprinkled over the soup. ORIGIN: Alla Medinsky, Kiev, Ukraine, circa 1996
