Lamb burgers with tabouli

1 | cup | Bulgar (cracked wheat) |
1 | cup | Minced parsley |
¼ | cup | Chopped mint |
2 | Scallion sliced | |
1 | medium | Tomato seeded and chop |
⅓ | cup | Olive oil |
⅓ | cup | Lemon juice |
3 | ounces | Feta cheese crumbled |
1 | Minced garlic clove | |
1 | teaspoon | Dried oregano |
1½ | pounds | Very lean ground lamb |
Directions
In a 2 quart casserole, combine cracked wheat and 2 cup boiling water. Let stand 40-45 minutes until water is absorbed. Stir in next 6 ingredients.
Cover and chill 3 hours. Prepare grill as manufacturer directs. In small bowl, mix feta cheese, garlic and oregano. Shape lamb into 12 burgers.
Press about 2 teaspoon cheese mixture into center of each burger, pinching lamb to cover opening. Place burgers on grill over medium hot coals; cook 12-15 minutes, turning once. Serve with tabouli.
