Leafy greens with lime & chilies

Ingredients

6 | tablespoons | Virgin olive oil |
1½ | pounds | Spinach -- washed and chopped |
1 | teaspoon | Garlic -- minced |
¼ | cup | Lime juice |
1 | tablespoon | Red pepper flakes |
1 | teaspoon | Sugar |

Directions
In your largest saute pan, heat the oil over high heat until very hot and just beginning to smoke. Add the spinach and stir furiously until the spinach has turned bright green and becomes slightly wilted, about 1 minute. Add the garlic and cook for 20 seconds more.
Add the lime juice, red pepper flakes, sugar, salt and pepper. Cook, still stirring vigorously, for an additional 10 to 15 seconds.
Remove from the heat and serve at once.
