Lecho (mom's tomatoe/pepper combo)

Ingredients

Quantity Ingredient
2 tablespoons Olive oil*
Yellow peppers
Tomatoes; skinned;quartered

Directions

*Use enough oil to coat peppers. Slice peppers lengthwise in strips.

Saute in oil. Add tomatoes. Cook down til juice evaporates and all is saucy, but not watery. Pack in jars and seal. To be used as a "soup" with knockwurst slices or as a meat marinade. LISA CRAWLEY TSPN00B
