Hot lima bean and tomato combo

Ingredients

2 | cups | Fresh lima beans; shelled |
2 | tablespoons | Vegetable oil |
1½ | tablespoon | All-purpose flour |
1 | medium | Onion; chopped |
1 | each | Fresh hot pepper; chopped |
3 | mediums | Tomatoes; peeled and chopped |
Dash of pepper |
Directions
Cook beans in boiling salted water 20 minutes or until tender; drain, reserving liquid. Add enough water to liquid to equal 1 cup.
Set beans and liquid aside.
Combine oil and flour in a heavy skillet. Cook over medium heat, stirring constantly, until roux is the color of a copper penny. Add onion and hot pepper; cook, stirring constantly, until tender. Add reserved liquid, tomatoes, and pepper; cook over medium heat, stirring constantly, until slightly thickened. Stir in limas; cook until thoroughly heated. Yield: 4 to 6 servings.
