Tomato and pepper relish

Ingredients

Quantity Ingredient
12 mediums Onions
10 mediums Green tomatoes
6 cups Green or green & red peppers
4 cups Vinegar
6 cups Sugar
2 cups Water
teaspoon Turmeric
½ tablespoon Celery seed
½ tablespoon Mustard seed
½ cup Salt

Directions

Chop onions, tomatoes and peppers. Add salt. Let stand overnight. Drain.

Put other ingredients in a pot and bring to a boil. Add drained vegetables to liquid and bring to a boil. Cook 10 minutes, then simmer 10 minutes. Put in airtight jars. No processing necessary.
