Lee's spare ribs & apple dressing

3 | pounds | Pork spare ribs |
1 | cup | Celery,chopped |
1 | tablespoon | Butter or margarine |
2 | cups | Cornbread cubes |
¼ | teaspoon | Rosemary,crushed |
Pepper | ||
¼ | cup | Water |
1 | Onion,chopped | |
1 | Apple,small,3/4\" pieces | |
½ | teaspoon | Sage |
Salt | ||
3 | tablespoons | Chili sauce |
Directions
1. Place ribs on a rack in a 13x9x2-inch pan or baking dish; add water.
2. Cover tightly; bake in preheated 350'F. oven 1½ hours. 3. Meantime, cook celery and onion in butter in a large skillet 2 to 3 minutes.
4. Add apple pieces; continue cooking 2 to 3 minutes longer. 5. Stir in cornbread cubes, sage and rosemary. 6. Remove ribs from pan; season with salt and pepper. 7. Pour off and reserve drippings; add ½ cup drippings to bread mixture; tossing lightly to combine. 8. Shape dressing into 4 equal mounds; place on a rack in the baking dish.
9. Combine chili sauce with 3 tablespoon drippings; brush both sides of ribs.
10. Place ribs on top of dressing mounds; bake, uncovered, 30 minutes, brushing with remaining sauce after 15 minutes.
