Leftover cooked rice - berry rice layer dessert

Ingredients

Quantity Ingredient
300 grams Cooked white rice; (any type)
350 grams Ripe berries; prepared
4 tablespoons Vanilla sugar
2 tablespoons Berry conserve
1 ounce Zest; shredded, juice
; squeezed
450 grams Creme fraiche; (or fromage frais)
Extra fruits or mint to decorate

Directions

Whizz the rice, half of the berries, and all of the sugar along with the fruit conserve briefly in a food processor to a rosy puree. Layer this in 4 serving glass dishes or bowls.

Add a layer of remaining fruit, the juice then the dairy product of your choice. Add the zest.

Decorate with extra fruits or mint and serve cool.
