Lemon butter bars

Ingredients

Quantity Ingredient
2 cups Flour
1 cup Butter, softened
½ cup Confectioners Sugar
4 Eggs
2 cups Sugar
1 teaspoon Baking Powder
½ teaspoon Salt
1 cup Freshly sqeezed Lemon Juice

Directions

1. Preheat oven to 350 F. 2. Beat together flour, butter and ½ cup confectioners sugar

in small bowl ,with electric mixer until well blended. 3. Bake in preheated oven for 25 to 30 minutes or until golden. 4. Beat eggs, sugar, baking powder, salt and lemomjuice in small bowl until smooth. Pour over hot crust. 5. Bake 15 minutes more or until bubbly and light brown. 6. Cool completly on wire rack. Dust lightly with reminding

confectioners sugar. Cut into diamonds, about 21/2"X 1 ½ ".

Use small spatula to lift diamonds out of the pan. 7. Store airtight at room temperature.
