Lemon ginger sundaes

1 teaspoon Cornstarch
¼ cup Water
1 cup Frozen fat free vanilla yogurt
1 teaspoon Grated lemon peel
½ teaspoon Lemon juice
½ teaspoon Margarine or butter
3 tablespoons Finely crushed gingersnap cookies

In small saucepan, combine sugar and cornstarch; mix well. Stir in water until well blended. Bring to a boil. Cook, stirring constantly, until thickened. Remove from heat, stir in lemon peel, lemon juice, and margarine. Cool slightly. Scoop yogurt into 2 individual dessert dishes. Top each with lemon sauce; sprinkle with cookie crumbs. Serve immediately.
