1½ | cup | All-purpose flour |
¾ | cup | Granulated sugar |
3 | teaspoons | Baking powder |
¾ | teaspoon | Salt |
2 | teaspoons | Grated lemon rind |
½ | cup | Chopped walnuts |
¾ | cup | Milk |
1 | Egg | |
⅓ | cup | Melted shortening |
Glaze | ||
¼ | cup | Granulated sugar |
2 | tablespoons | Lemon juice |
Directions
Preheat oven to 375 degrees.Crush special K to 1 cup. Sift flour,sugar,baking powder and salt together.Add lemon rind and walnuts. Stir in milk, egg and melted shortening.Pour into a well greased loaf pan and bake 30 to 35 minutes.While still warm mix glaze and spoon over surface.
