Lemon tempura dory

pounds Fillets of mirror dory, john dory, redfish or sea perch
1 teaspoon Grated lemon zest
¼ cup Lemon juice
¼ cup Mineral or soda water
1 cup Cornflour
1 each Egg white
¼ cup Polyunsaturated oil

Directions

Cut fish fillets in half lengthwise. Combine lemon zest, lemon juice and soda or mineral water. Gradually blend into cornflour to form a smooth batter. Set aside for 10 minutes. Beat egg until soft peaks form. Fold into batter. Dip fillets in batter, then allow excess to drain. Shallow fry fish in hot oil for 2 minutes on each side or until flesh flakes.
