Lemon-baked chicken

1 2 1/2-3 lb frying chicken;
2 tablespoons Oil or melted margarine
3 tablespoons Lemon juice, fresh
1 Cl Garlic; crushed
½ teaspoon Salt
dash Pepper

Directions

Recipe by: 1975 American Heart Association Brochure Preheat oven to 350 F. In a bowl, combine lemon juice, oil, garlic, salt and pepper.

Arrange chicken in a shallow casserole or baking pan, and pour over it the lemon and oil mixture. Cover and bake until tender, about 40 mins, basting occasionally. Uncover casserole and bake 10 mins longer to allow chicken to brown. To serve, sprinkle with chopped parsley.
