Lemon-rosemary tofu-roasted pepper and pesto sandwiches

Quantity Ingredient
1 large Red pepper, roasted, peeled,
\N \N ...and seeded
¼ cup Pesto
8 slices Whole grain bread
1 \N Recipe Lemon-Rosemary Tofu

Cut pepper into four large pieces. Spread pesto on four slices of bread, and top each with one piece of pepper. Place one slice of Lemon-Rosemary Tofu on top. Cover each with a slice of bread. Serve with a crisp green salad.
