Leprechaun spice cake

2 | cups | Brown sugar |
1 | cup | Water, hot |
1 | cup | Guiness,warm(or more water) |
2 | tablespoons | Margarine (soy) |
15 | ounces | Raisins |
1 | teaspoon | Salt |
½ | teaspoon | Cloves |
1 | teaspoon | Cinnamon |
½ | teaspoon | Nutmeg |
3 | cups | Whole wheat pastry flour |
1 | teaspoon | Baking soda |
1 | teaspoon | Baking powder |
Directions
Bring sugar, water, Guiness, margarine, raisins, salt and spices to a boil in a heavy saucepan, simmer for 5 minutes. Allow to cool. Stir dry ingredients together. Mix into cooled mixture. Bake in a lined (with 2 layers of wax paper) large loaf pan at 350F for 1½ hours.
