Lobster sausage

Ingredients

Quantity Ingredient
4 Feet small hog casings
pounds Whitefish fillet, cubed
½ teaspoon Ground mustard seed
½ teaspoon Ground coriander
1 teaspoon Paprika
1 teaspoon Lemon juice
½ teaspoon White pepper
1 Egg, beaten
½ pounds Coarsley chopped lobster met

Directions

Prepare casings. Pulse the fish in food processor just until it is broken, 3-4 times.. Add the mustard, coriander, paprika, lemon juice, pepper and egg. Process until blended. Put the mixture in a mixing bowl and add the lobster meat; blend well. Stuff casings and twist off into 3-4" links.
