Lumachine with sun-dried tomatoes

Ingredients

Quantity Ingredient
12 ounces Lumachine, farfalle or elbow-shaped pasta
15 eaches Sun-dried tomatoes, the unmarinated type, cut into strips
3 tablespoons Olive oil
1 each Garlic clove, chopped
Salt & pepper, to taste
Thyme, to taste

Directions

Cook the pasta & sun-dried tomatoes in boiling water until the pasta is tender. Drain (the water may be reserved for soups or stews, etc since it will be flavoured by the cooking tomatoes).

Toss in the oil, garlic, salt, pepper & thyme. Serve immediately.

VARIATION: Tender, sweet summer squash adds a sunny note to this simple pasta. Add 1 or 2 diced summer squashes -- crookneck or zucchini -- to the cooking water with the pasta & tomatoes. Also add mangetout to add some sweetness.
