Luscious stuffed lamb shoulder

5 | pounds | Boned lamb shoulder |

10 | slices | Diced raisin bread |
1 | Pack (8oz) diced mixed dried | |

1 | cup | Minced onion |
1 | cup | Minced celery & leaves |
1 | cup | Orange juice |
2 | teaspoons | Grated lemon rind |
6 | Thick bacon slices |
Directions
Wipe shoulder inside & out with paper towels. With needle & heavy cord, sew small opening in shoulder. Sprinkle inside & out of large opening with salt & pepper. Combine bread, fruits, onions & celery in large mixing bowl; pour orange juice over & sprinkle with rind. Toss with fork to mix. Put stuffing in shoulder. Set roast on rack in shallow roasting pan; roast in 350 oven for 1½ hours. Place bacon slices over lamb; roast 45 minutes longer. NOTE: Any surplus stuffing can be put in greased casserole, bake, covered, for last 45 minutes.
