Macadamia and apple muffins

2 Granny Smith apples; peeled and cored
1 cup Caster sugar
cup Plain flour
1 teaspoon Bi-carbonate of soda
1 teaspoon Allspice and cinnamon
1 cup Chopped macadamias
1 Egg
125 grams Unsalted butter; melted

Directions

1. Pre-heat oven to 180deg.C. Grease a 12 cup muffin tin or mini muffin tins.

2. Cut apples into small dice and combine in a bowl with the sugar. Mix well and set aside for 30 minutes.

3. Sift flour, bi-carbonate of soda and spices into a large bowl and add the macadamias. Add cooled butter, egg and apples and mix together.

4. Spoon into muffin tins and bake for about 15-20 minutes for the large muffins, less time for the smaller size. Test with a wooden skewer before turning out onto a wire rack to cool. Dust heavily with icing sugar before serving.
