Mani's low-fat apple-walnut muffins

Ingredients

3 | cups | Whole Wheat Pastry Flour |
½ | teaspoon | Salt |
1½ | teaspoon | Baking Soda |
½ | teaspoon | Cinnamon |
¼ | teaspoon | Ginger |
¼ | teaspoon | Allspice |
3 | Eggs | |
1 | cup | Buttermilk |
1⅔ | cup | Apple Juice Concentrate |
⅓ | cup | Oat Bran |
2 | cups | Apples, diced |
½ | cup | Walnuts, chopped |
2 | Apples, sliced |
Directions
Preheat oven to 350o. Let fruit juice concentrate thaw to a slushy consistency. In a medium size bowl, sift together flour, salt, baking soda, cinnamon, ginger, and allspice. Set aside In a large bowl, whisk together eggs, buttermilk, and fruit juice concentrate. Whisk the flour mixture into the liquid, adding bran.
Stir in diced apples and walnuts.
Line a muffin tin with baking cips; divide batter evenly among cups.
Top each muffin with an apple slice. Bake for 35 minutes.
