Low fat apple cinnamon muffins

Pam Cooking Spray
¾ cup Skim Milk
cup Not Fat Plain Yogurt
2 Egg Whites
1 Egg
2 teaspoons Vanilla
Zest of 1 Lemon
cup All Purpose Flour
cup Dark Brown Sugar, firmly
Packed
teaspoon Ground Cinnamon
teaspoon Baking Soda
¾ teaspoon Baking Powder
1 medium Apple, peeled, cored &
Chopped

Directions

Heat oven to 375 degrees. Spray only the bottoms of 12 medium muffin cups with PAM. In a large bowl beat milk, yogurt, egg whites, egg, vanilla and lemon zest. In a seperate bowl combine flour, sugar, cinnamon, baking soda & baking powder. Fold dry ingredients into wet until just moist. Stir in apple. Divide batter among muffin cups.

Bake 18 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan and cool on wire rack.
