Maple-glazed pumpkin and onions

Ingredients

1½ | cup | Pearl onions |
4 | cups | Cubed peeled pumpkin |
1 | teaspoon | Olive oil |
½ | teaspoon | Dried rubbed sage |
¼ | teaspoon | Salt |
⅛ | teaspoon | Pepper |
3 | tablespoons | Maple syrup |
Directions
Bring water to a boil in a large saucepan; add onions, and return to a boil. Drain onions and rinse under cold water. Drain well; peel onions, and slice in half vertically.
Preheat oven to 375°F. Combine onions and next 5 ingredients in a 2-quart casserole. Bake at 375° for 20 minutes. Add syrup; bake an additional 30 minutes, stirring every 10 minutes.
Yield: 6 servings (serving size: ½ cup).
