Mashed potatoes with olive oil

Ingredients

3 pounds (to 3 1/2 lb)
Yukon Gold potatoes
Peeled, cut in 1/2\" pieces
4 Garlic clove(s), peeled
½ cup Extra-virgin olive oil
6 tablespoons Butter

Directions

Cook potatoes and garlic in large saucepan of boiling salted water until tender, about 15 min. Drain, reserving ½ cup cooking liquid.

Place potatoes and garlic in large bowl. Add oil and butter and mash until smooth, adding some reserved cooking liquid if necessary to moisten. Season to taste with salt and pepper.
