Mashed spinach, indian style

Ingredients

3 | cups | Packed spinach |
1 | tablespoon | Ghee |
2 | mediums | Onions, diced |
2 | eaches | Garlic cloves, sliced |
1 | teaspoon | Grated ginger |
1 | teaspoon | Cayenne |
2 | mediums | Tomatoes, chopped |
Salt | ||
1 | teaspoon | Garmam masala |
Directions
Wash & drain spinach. Bring to a boil in a pan with a little water, remove from heat & drain very well. Chop spinach.
Heat ghee in a skillet & saute onion & garlic until they are golden.
Add ginger, cayenne & tomatoes. Stir over a moderate heat for 3 minutes. Mix in the chopped spinach. Add salt & cook, stirring, for 5 minutes. Sprinkle with garam masala & continue to stir-fry for 3 to 5 minutes.
