Meat & potato quiche^

Ingredients

3 tablespoons Vegetable oil
3 cups Well drained shredded peeled
Potatoes
1 cup Shredded mozzarella cheese
¾ cup Browned ground beef
¼ cup Chopped onion
1 cup Heavy cream
5 Eggs
½ teaspoon Salt
teaspoon Pepper
1 tablespoon Minced fresh parsley

Directions

Press combined potatoes and oil into a 10" pie plate firmly and bake at 425f. until lightly browned, about 10 mintues. Layer with mozzarella, beef, and onion.
