Meatloaf with vegetable stuffing

Ingredients

½ | cup | Canned sliced mushrooms; drained |
1 | cup | Canned carrots; drained and chopped |
1 | cup | Canned green beans; drained and chopped |
¾ | ounce | Dried bread crumbs; (3 Tablespoons) |
2 | Eggs or equivalent in egg substitute | |
16 | ounces | Ground turkey or beef; (90 % lean) |
½ | cup | Chopped onion |
1½ | ounce | Rolled oats; (1/2 cup) |
1 | tablespoon | Worcestershire sauce |
¼ | cup | Catsup |
¼ | teaspoon | Pepper |
½ | teaspoon | Garlic powder |
Directions
Preheat oven to 375 degrees. In medium bowl combine mushrooms, carrots, green beans, bread crumbs and 1 egg. Set aside. In large bowl combine meat, onion, oats, remaining egg. Worcestershire sauce, catsup, pepper and garlic powder. Spread half of meat mixture in bottom of ungreased 9 x 5 loaf pan.
Cover with vegetable mixture, spreading evenly. Spread remaining meat mixture over vegetables. Bake 45-55 minutes. Cool minutes before serving.
