Melon compote

Ingredients

Quantity Ingredient
½ medium Honeydew melon, cut in
Chunks
½ medium Cantaloupe, cut in chunks
¼ cup Thawed orange juice
Concentrate
1 tablespoon Light rum or lemon juice
6 tablespoons Sweetened coconut
Fresh mint (garnish)

Directions

Gently mix melon chunks, orange juice & rum in bowl. Refrigerate 30 minutes. Spoon into glasses. Sprinkle with coconut. Garnish with mint.
