5 pounds Tripe (menudo)
2 eaches Calves feet
3 tablespoons Garlic powder
1 each Onion, chopped fine
3 cans White hominy

Wash menudo and remove fat. Cut into bite-size pieces. Split the

feet and salt into a large pot. Cook over high flame until all juice is extracted. Lower flame to medium, and continue to cook until menudo is tender, but still firm. Add onion, garlic, and hominy.

Serve with separate bowls of chopped onion and crushed chiles for seasoning.
