Mexican ham and egg bake

¼ | cup | All purpose flour |
½ | teaspoon | Baking powder |
½ | teaspoon | Salt |
¼ | pounds | Canned green chilies; diced, (wear rubber gloves) |
1 | cup | Cottage cheese |
½ | pounds | Monterey Jack cheese; shredded |
2 | teaspoons | Unsalted butter |
1½ | pounds | Cooked ham; cut into 3/4 inch slices |
1½ | cup | Salsa |
Directions
Prep: 10 min, Cook: 30 min. Preheat oven to 375øF. Whisk eggs in a mixing bowl. Add flour, baking powder and salt and mix thoroughly. Stir in next 3 ingredients. Transfer to a buttered 9 inch baking dish. Bake 30-35 minutes or until center is just set. Let stand 5 minutes before cutting into squares. Melt butter in a heavy nonstick skillet over medium heat. Saut ham 2-3 minutes per side until browned. Transfer to a platter and keep warm until ready to serve with eggs and salsa.
This recipe serves 8 people. Because this recipe is for a particular size pan, it adjusts the number of servings only in multiples of 8.
