Mint carrot pineapple salad

Ingredients

Quantity Ingredient
4 mediums Carrots; Shredded, About 2 Cups
¾ cup Pineapple; Finely Chopped
cup Fat Free Plain Yogurt
2 tablespoons Fresh Mint Leaves; Chopped
2 tablespoons Lemon Juice
1 teaspoon Honey
½ teaspoon Ground Cinnamon
¼ teaspoon Ground Cumin
3 cups Leaf Lettuce; Torn Into Bite Sized Pieces, About 1/2 Large Head

Directions

Mix all of the ingredients except the lettuce in a glass or plastic bowl, blending well. Cover and refrigerate about 2 hours or until well chilled. Serve on the lettuce.
