Minted tomato salad

⅓ | cup | Mint leaves |
¼ | cup | Olive oil |
¼ | cup | Orange juice |
1 | tablespoon | Balsamic vinegar |
1 | Clove garlic -- minced | |
Salt and pepper | ||
2 | pounds | Tomatoes (4 to 6) |
Directions
Wash, dry and finely chop the mint leaves. Combine the mint, olive oil, orange juice, vinegar, garlic, salt, and pepper in a glass bowl.
Slice the tomatoes and place in the dressing, turning the slices to coat evenly. Refrigerate for at least 1 hour. Reserve 4 slices tomato for Grilled Buffalo Burgers.
