In a small bowl, beat almond paste, egg yolk, and milk with an electric mixer on medium until well blended. Stir in mini-chocolate chips. 2. Unroll dough; separate into 8 triangles. Place 1 scant Tbs almond paste mixture at long end opposite point of triangle and roll dough up to point of triangle. Place rolls, point side down, on an ungreased baking sheet. Lightly beat egg white with a fork and brush over tops of croissants. 3. Bake 12 mins, or until croissants are golden brown.
Serve warm or at room temperature.
