Mom's pickled beets

Ingredients

Quantity Ingredient
¾ cup Sugar
¾ cup Vinegar
¾ cup Water
teaspoon Salt
¾ teaspoon Pepper
1 large Onion; thinly sliced
2 cans (13 1/4 oz.) sliced beets; undrained
Sliced green onions; optional

Directions

In a saucepan, combine the first six ingredients; bring to a boil. Reduce heat; cover and simmer for 5 minutes. Remove from the heat; add beets. Let stand at room temperature for about 1 hour. Cover and chill 6 hours or overnight. Garnish with green onions if desired. Yield 6 servings.
