Montauk poached salmon

cup Chablis or other dry white wine
½ cup Water
2 tablespoons Lemon juice
1 Bay Leaf
½ teaspoon Salt
½ teaspoon Dried whole thyme

4 (4-ounce)salmon fillets**
1 small Onion, sliced
1 medium Tomato, peeled and sliced
½ cup Fresh Mushrooms, sliced

Directions

Instructions:

Combine first 8 ingredients in a 10-inch skillet, stirring well; bring mixture to a boil. Cover, reduce heat, and simmed 10 minutes. Layer fillets, onion, tomato, and mushrooms in wine mixture; cover and simmer 8 minutes or until fish flakes easily when tested with a fork.

Transfer fish and vegetables to a serving platter.
