Mr food's tex-mex potato salad - 8/14/95

½ cup Sour cream
½ cup Salsa
½ teaspoon Lemon juice
½ teaspoon Salt

Sliced black olives -- (1/2
Red onion -- diced
Green chiles -- chopped,

Directions

Place the potatoes in a medium-sized saucepan and add enough water to cover the potatoes. Bring to a boil over medium-high heat and cook for 15-20 minutes, until fork-tender; drain and cool. Meanwhile, in a medium-sized bowl, combine the remaining ingredients. Peel the potatoes and cut into ½-inch cubes; place the potatoes in a large bowl and add the dressing mixture. Toss gently until well blended; cover and chill thoroughly before serving.
