Mr food's true fried grits

Ingredients

5 | cups | Water |
1 | teaspoon | Salt |
1½ | cup | White or yellow grits |
2 | tablespoons | Butter |
2 | tablespoons | Vegetable oil |
Directions
Line a 5x9 inch loaf pan with plastic wrap and coat with nonstick cooking spray. In a medium saucepan, bring water and salt to a boil over Medium heat. Stirring constantly, add grits and cook 8-10 minutes, or until water is absorbed and mixture is very thick. Spoon into loaf pan. Cove and chill at least 2 hours. Invert grits onto a cutting board and remove plastic wrap. Cut into ½" thick slices. In a large skillet, heat butter and oil over Medium heat until fry the slices, a few aty a time, 2-3 minutes per side, or until golden. Serve immediately. Serves 8-10. MC formatting by bobbi744@...
NOTES : Recipe also found in Mr. Food's Simple Southern Favorites. Bobbie's notes: As a child my mother always chilled leftover grits and it was chilled, sliced and served for breakfast with butter and syrup.
