Mushroom and tarragon tagliatelle

Ingredients

250 grams Dried tagliatelle; (8oz)
2 tablespoons Olive oil
25 grams Butter; (1oz)
1 large Onion; chopped
2 Cloves garlic; crushed
1 454 gram pac mixed mushrooms; washed and sliced
; (1lb)
tablespoon Freshly chopped tarragon
Salt and freshly ground black pepper

Directions

1. Cook the tagliatelle following instructions on the pack, draining when cooked.

2. Meanwhile, heat the oil and butter in a frying pan until the butter has melted, add the onion and cook for 3-4 minutes, stirring occasionally until softened.

3. Add the garlic and mushrooms and cook for a further 5-6 minutes, stirring frequently. Add the tarragon and seasoning and cook for a further minute.

4. Add the cooked drained tagliatelle to the mushrooms, mix well.

5. Serve immediately garnished with a sprig of fresh tarragon.
