Mushroom saute with zucchini and italian sausage

Ingredients

2 Link poultry italian sausage
1 tablespoon Oil
2 tablespoons Garlic; chopped
¾ pounds Mushrooms; sliced
¾ pounds Zucchini; cut in 1/2\" cubes
½ cup Parsley; chopped
Salt and pepper

Directions

Poke sausage in serveral places; place in skillet with ½ cup water.

Cover and steam cook over low heat for 5 minutes. Uncover and continue cooking until water has evaporated and sausage is lightly browned and cooked throughout. Remove sausage from skillet and slice into ½" rounds. Heat the oil in the skillet and stir fry the garlic, mushrooms and zucchini until crisp tender. Return sausage to skillet and season to taste.
